There's something so personal and "human" about wanting to create a restaurant business, maybe because eating is something we do every day, or maybe because food establishments are the oldest biz in the world and often the center of community engagements. And you're right, they are a labor of love. I learned how to make Yakitori, and after many years of iterating and sharing it with friends and family, I've cooked course meals for clients, not at your scale but more as a hobby. 100% agree, I think with this idea it was so eye opening to see the excitement other people had in it for the very reason you said.
