Great post Ian! There's something so personal and "human" about wanting to create a restaurant business, maybe because eating is something we do every day, or maybe because food establishments are the oldest biz in the world and often the center of community engagements. And you're right, they are a labor of love. I learned how to make Yakitori, and after many years of iterating and sharing it with friends and family, I've cooked course meals for clients, not at your scale but more as a hobby. Even then, it is hard! Let's exchange my yakitori with your toasties one day!
